Marinated Artichoke Hearts

Ingredients
2 packages (9 ounces each) frozen artichoke hearts
3/4 cup vegetable oil
1/3 cup tarragon flavored vinegar
2 tablespoons finely chopped parsley
1 tablespoon finely chopped onion
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, minced
Preparation
Cook artichoke hearts according to package directions, just until tender-crisp. Drain thoroughly. Mix together remaining ingredients and pour over artichoke hearts. Cover and refrigerate overnight. Serve as an appetizer or with egg, seafood or tossed green salads.
Yield: about 5 dozen
