Mashed Potatoes

Preparation

Boil 1 pound potatoes according to Fresh Vegetable Cookery directions; drain and pare. Mash potatoes thoroughly using a masher or an electric mixer. Gradually add hot milk, beating constantly until desired consistency is reached. Season with salt, pepper and butter.

Yield: 3 to 4 servings
