Miracle Cheesecake

Ingredients

Vanilla Wafer Crust
1 package (3 ounce) lemon-flavored gelatin
1 cup boiling water
3-5 tablespoons lemon juice
8 ounces cream cheese, softened
1 cup sugar
1 can (13 ounce) evaporated milk, chilled and whipped

Preparation

Prepare a double recipe of Vanilla Wafer Crust, reserving a few wafer crumbs for garnish and pressing remaining crumbs in 2ó8 inch pie pans; chill. Dissolve gelatin in boiling water; stir in lemon juice and set aside to cool. Beat cream cheese and sugar together until light; mix in cooled gelatin mixture. Fold whipped evaporated milk into cheese mixture; pour into crust and garnish with reserved wafer crumbs. Chill.
