Mixed Fruit Ice

Ingredients
2 cups sugar
1 cup water
4 bananas, peeled and diced
1 package (16 ounce) individually frozen whole strawberries, thawed and cubed
1 can (20 ounce) pineapple slices, drained and cubed
1 can (30 ounce) apricots, drained and diced
shredded coconut or angel food cake slices
Preparation
Cook sugar and water together to make a syrup; cool. Place diced bananas in salted water to prevent darkening; remove from water and rinse. Pour syrup over combined bananas, strawberries, pineapple and apricots. Apportion fruits and syrup in small paper cups set in muffin cups; freeze until firm. Store in plastic bags. To serve, allow to stand at room temperature about 10 minutes; remove from paper cups and place on shredded coconut or angel food cake slices.
