Oatmeal Cookie Slices

Ingredients
1/2 cup Roberts Butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 Roberts Egg
1 1/2 teaspoons grated lemon rind
1 1/2 tablespoons molasses
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick-cooking rolled oats
1/2 cup chopped nuts, optional
Preparation
Cream together softened butter and sugars; beat in egg. Add grated lemon rind, molasses and vanilla extract, blending well. Sift flour, baking soda and salt together; add gradually to creamed mixture, mixing well after each addition. Stir in rolled oats and if desired, nuts, mixing until well-blended. Form into a roll 2 inches in diameter. Wrap roll tightly and chill thoroughly. Cut roll into 1/4 inch slices and place on buttered baking sheets. Bake at 400° for 8 to 10 minutes.
