Pear Relish

Ingredients

2 pounds fresh pears
1 pound tomatoes
1 cup chopped green pepper
1/2 cup chopped onion
1 cup sugar
1 teaspoon salt
1/8 teaspoon cayenne
1 teaspoon dry mustard
1 teaspoon ginger
1/2 cup vinegar

Preparation

Pare, core and coarsely dice pears to make 4 1/2 cups. Blanch and peel tomatoes; cut into wedges to make 2 cups. Mix all ingredients together in a large kettle. Bring to a boil, stirring occasionally. Reduce heat; simmer 1 hour, or until pears are soft and transparent and juice is thickened. Serve warm or cold with beef, lamb or veal.

Yield: 1 quart
