Pedernales River Chili

Ingredients

1 pound coarsely ground beef
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon oregano
1 teaspoon cumin seed
2-3 teaspoons chili powder
2 cans (10 ounces each) tomatoes and green chiles
salt to taste
2 cups hot water

Preparation

Place ground beef, onion and garlic in a large heavy skillet. Sear until lightly browned. Stir in oregano, cumin seed, chili powder, undrained tomatoes and green chiles, salt and hot water. Bring to a boil; reduce heat and simmer about 1 hour. (Skim fat from surface often.)

Yield: 4 to 6 servings
