Pineapple Parfaits

Ingredients

1/2 cup Roberts Butter, softened
1 cup sugar
3 Roberts Eggs, separated
1 cup drained crushed pineapple
1 cup walnuts, chopped
1 cup crushed vanilla wafers
Sweetened Whipped Cream
maraschino cherries, optional

Preparation

Cream butter and sugar together until light and fluffy; add beaten egg yolk and drained pineapple. Beat egg whites until stiff peaks form; fold in creamed ingredients and blend in chopped walnuts. Place pineapple mixture in alternating layers with crushed vanilla wafers in parfait or sherbet dishes. Chill 24 hours. Garnish with Sweetened Whipped Cream and maraschino cherries, if desired.
