Roast Domestic Duck

Preparation

Sprinkle inside of a 3 to 5 pound duck with salt; stuff lightly with Apple-Raisin Dressing or Wild Rice Dressing. Truss; place breast side up on rack in shallow pan. If desired, tie thin strips of salt pork on outside of duck. Pour water into baking pan to a depth of 1 inch. Roast, uncovered, at 375° for 2 to 2 1/2 hours; increase temperature to 425° for an additional 15 minutes, or until leg moves easily. Serve hot with Roast Duckling Sauce.

Yield: about 1 serving per pound
