Roast Leg of Spring Lamb

Ingredients

1 leg of lamb (about 10 pounds)
1/2 cup Roberts Butter, melted
1 clove garlic, crushed
1 tablespoon salt
1 tablespoon paprika
1 teaspoon pepper
1 tablespoon parsley flakes

Preparation

Wash lamb; remove all fat. Place in oven-proof baking dish. Mix together melted butter, crushed garlic, salt, paprika, pepper and parsley flakes; brush over lamb thoroughly. Bake at 350° about 4 hours, or until tender. Serve with mint jelly, if desired.

Yield: 12 servings
