Roast Wild Goose

Ingredients

1 ready-to-cook wild goose
salt
apples, quartered
1 can (16 ounce) jellied cranberry sauce

Preparation

Wash goose; rub inside and out with salt. Stuff loosely with quartered apples. Place in roasting pan, breast side up. Pour 1 cup hot water in roasting pan. Slice cranberry sauce; place slices over goose. Cover and roast at 325° for 45 to 60 minutes per pound, or until very tender. Baste frequently with pan drippings. Discard stuffing and serve.
