Ingredients
1 cup yellow corn meal
2 tablespoons light margarine
2 cups leftover cooked turkey, chopped
2 cups grated light cheddar cheese
1 cup Roberts Trim n’ Lite Sour Cream
1/4 teaspoon salt
Preparation
Preheat the oven to 350 degrees. Boil 3 cups of water, add the salt and stir in the corn meal. Stir constantly until thick and smooth. Remove from heat and add the margarine. Butter a 2 quart casserole pan and put half the corn meal on the bottom. Then place half the turkey and cheese on top. Repeat till remaining ingredients are used. Bake at least 30 minutes until corn meal is set. Serve with a dollop of sour cream. This dish be made ahead and frozen. Set the sour cream on the table so everyone can enjoy it as they wish. A great way to use leftovers as well.
