Salmon Party Log

Ingredients

1 can (16 ounce) salmon
8 ounces cream cheese, softened
1 tablespoon lemon juice
2 teaspoons grated onion
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/2 cup chopped pecans
3 tablespoons snipped parsley

Preparation

Drain and flake salmon, discarding skin and bones. Combine salmon with cream cheese, lemon juice, grated onion, prepared horseradish, salt and liquid smoke; mix well. Chill at least 4 hours. Combine pecans and parsley. Shape salmon mixture into an 8 x 2 inch log and roll in nut-parsley mixture. Chill well. Serve with crisp crackers.

Yield: 1 1/2 pounds
