Savory Barbecued Ribs

Ingredients

2 racks pork back ribs (about 7 pounds)
1 teaspoon salt
1/4 teaspoon Liquid Smoke
2 cups Barbecued Rib Sauce

Preparation

Place ribs in a large kettle. Cover with boiling water; add the salt and Liquid Smoke. Simmer, covered, about 1 hour, or until almost tender. Heat Barbecued Rib Sauce. Drain cooked ribs; thread on spit zigzag-style. Grill over hot coals, basting often with Sauce, for 40 to 60 minutes, or until no longer pink in center. (Cooking time can vary greatly, depending on amount of fat on ribs.) Serve with remaining hot Sauce.

Yield: 6 to 8 servings

Notes:

To oven-barbecue pork ribs, simmer in salted seasoned water; drain. Place in shallow baking pan, rib ends down, and pour hot Barbecued Rib Sauce over all. Bake at 350° for 20 to 30 minutes, basting often with Sauce.
