Scallop Bites

Ingredients

8 ounces boiled scallops (32)
16 slices bacon
8 slices white bread
8 ounces sliced Cheddar cheese
paprika

Preparation

Cut scallops in half, if necessary, to have 32 pieces. Broil bacon until crisp, reserving drippings. Drain well on absorbent paper; cut each in half. Trim crusts from bread and cut bread diagonally into quarters. Cut cheese diagonally into quarters and place on bread. Place bacon slice and scallop on top of cheese. Brush with bacon drippings and sprinkle with paprika. Place on a buttered broiler pan and broil about 3 minutes, or until browned.
