Sesame Pork Tenderloin

Cookbook

Ingredients

1 cup chicken stock
1/4 cup soy sauce
1/4 cup honey
2 tablespoons sherry
1 tablespoon lemon juice
1 clove garlic, crushed
1 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon ginger
2-3 small pork tenderloins
2 tablespoons cornstarch
1/4 cup sesame seed

Preparation

In a glass bowl, combine chicken stock, soy sauce, honey, sherry, lemon juice, crushed garlic, cinnamon, salt and ginger. Place tenderloins in marinade and allow to stand 2 to 3 hours at room temperature. Drain liquid and reserve for basting. Roll each tenderloin in cornstarch and sprinkle sesame seed on top. Bake at 300° for 2 to 2 1/2 hours, or until pork is no longer pink, basting frequently with marinade. Serve as an entree or slice thin, roll and secure with a toothpick for hors d'oeuvres

Yield: 6 to 8 servings
