Spinach-Cottage Salad

Ingredients

1 package (3 ounce) lemon-flavored gelatin
1 cup boiling water
1/2 cup mayonnaise
2 tablespoons lemon juice
1 cup Roberts Cottage Cheese
1/2 cup finely chopped celery
1 small onion, grated
1 package (10 ounce) frozen chopped spinach, thawed and drained

Preparation

Dissolve gelatin in boiling water; stir in mayonnaise and lemon juice. Chill until slightly thickened; fold in remaining ingredients. If desired, pour into a 5 cup mold. Chill until firm.
