Stuffed Pork Chops

Stuffed Pork Chops are delicious served with fresh cauliflower, fresh okra and whole wheat rolls.
Ingredients
4 thick pork rib chops (with pocket)
salt and pepper to taste
1/4 cup tomato juice
2 tablespoons Roberts Butter, melted
3 cups soft bread crumbs
1 teaspoon salt
1/4 teaspoon poultry seasoning
1/4 cup diced celery
2 tablespoons chopped onion
2 tablespoons chopped parsley
Preparation
Wipe chops with damp towel; rub with salt and pepper. Combine tomato juice with remaining ingredients to make stuffing. Stuff pockets loosely: sew or lace shut. Brown chops in additional butter in hot skillet; place in buttered baking pan. Bake at 350° for 1 hour, or until tender, turning once.
