Sunshine Salad

Ingredients

1 carton (24 ounces) Roberts Low Fat Cottage Cheese
3/4 cup crushed pineapple from a can, drained
1/2 cup orange marmalade

Preparation

In a small bowl mix the drained pineapple and the orange marmalade. With a small ice cream scoop or a large table spoon, dip out one scoop into each of 4 custard cups or small bowls. Then spoon the drained pineapple/orange marmalade mix over the scoops and serve as a nice salad or appetizer. It is low fat and highly nutritious.
