Toasty Crab Canapes

For best results with canapes, spread bases with topping just before serving. Canapes prepared too far in advance can dry out and lose their appeal.

Ingredients

1 can (7 1/2 ounce) crab meat
1 1/2 tablespoons mayonnaise
1/2 tablespoon prepared mustard
1/2 tablespoon lemon juice
36 small canape rounds
2 tablespoons grated Parmesan cheese
1 tablespoon dry bread crumbs

Preparation

Remove cartilage from crab meat and chop crab meat fine. Combine mayonnaise, mustard, lemon juice and crab meat. Spread crab mixture on each canape round. Combine cheese and bread crumbs; sprinkle over each canape. Broil 3 inches from heat until browned, about 2 minutes.

Yield: 3 dozen
