Townhouse Eggs

Preparation

Butter 4 English muffin halves generously. Place a slice of cooked Canadian bacon, a Savory Poached Egg (page 96) and about 2 tablespoons grated Swiss cheese on top of each muffin half. Place on baking sheet and broil until cheese melts, about 3 to 5 minutes.

Yield: 4 servings
