Twice-Baked Potato Casserole

Ingredients

10 russet potatoes, pricked

8 tablespoons Roberts Butter

1 cup Roberts Sour Cream

1/2 cup Roberts Whipping Cream

1/2 cup crumbled bacon, already fried

1 pound cheddar cheese, grated

3 eggs

Preparation

Bake pricked potatoes at 400 degrees for 1 hour and 15 minutes. When cool, scoop flesh out and put in large bowl. Add butter, sour cream, whipping cream, crumbled bacon, and 3/4 pound cheese and eggs. Place in 9 x 13 casserole. Sprinkle remaining 1/4 pound cheese on top. Bake at 375 degrees for 35 minutes.
