Twice Baked Potatoes

Ingredients
4 medium potatoes, baked
2 Roberts Egg Yolks, beaten
2 tablespoons Roberts Butter, melted
1/2 cup grated sharp Cheddar cheese
1 teaspoon instant minced onion
1/4 teaspoon dry mustard
1/4 teaspoon celery salt
1/2 teaspoon salt
1/4 teaspoon pepper
1-2 teaspoons chopped chives, optional
Preparation
Cut a thin slice from the top of each potato; carefully scoop out potatoes from shells. Mix warm potatoes with remaining ingredients; whip until light and fluffy. Spoon mixture into shells. Bake at 350° for 20 minutes, or until nicely browned.
