Zucchini Relish

Ingredients
10 firm zucchini
3 tablespoons salt
1 medium green pepper, chopped
1 medium onion, chopped
2 stalks celery, sliced
2 pimentos, chopped
2 cloves garlic, crushed
1 cup wine vinegar
1/2 cup sugar
2 tablespoons dry mustard
1/2 teaspoon allspice
1 teaspoon salt
Preparation
Scrub zucchini; trim and chop fine. Sprinkle with 3 tablespoons salt; cover with cold water. Allow to stand 5 hours; drain well and rinse in cold water. Drain again. Place in a saucepan with remaining ingredients; simmer, stirring occasionally, until thickened (approximately 45 minutes). Seal in hot sterilized jars.
Yield: 4 half-pints
